Introduction
It is one of the most popular and delicious dish that
is abundantly made and served in North Indian states especially in Punjab region.
It is made
with Indian cottage cheese in a smooth spinach gravy. The best way to prepare the
spinach-cheese curry is as follows:
Ingredients
For the sake
of perfection, we can prepare this recipe for 5-6 persons.
I) 300gms. of spinach
washed leaves.
II) 1 cup of mixed
dry fruits.
III) 300gms. of
cheese square pieces.
IV) 1 piece of
chopped ginger.
V) 2 cloves of
chopped garlic.
VI) 2 chopped
green chillies.
VII) ¾ tsp. of
garam masala powder.
VIII) 1 tsp. of red chilli powder.
IX) ½ tsp. of
cumin seeds.
X) 1 tsp. of
coriander powder.
XI) ¼ tsp. of turmeric
powder.
XII) 1 chopped
onion.
XIII) 4 chopped
tomatoes.
XIV) 2 tbsps. of
ghee.
XV) 1 pinch asafoetida.
XVI) ½ cup of
chopped coriander leaves.
XVII) ½ cup of milk
&
XVIII) Salt to taste.
Method
1) Initially, put
spinach leaves in a mixer to prepare puree.
2) Put all the
dry fruits in milk and make a smooth paste.
3) Heat ghee in
a frying pan and saute asafoetida and cumin seeds, then add onion, garlic,
ginger and green chillies and fry for 3-4 minutes. Stir well while frying.
4) Add red
chilli powder, coriander powder, turmeric powder, and salt and fry for a
minute. Then mix the dry fruits to it.
5) After frying
on low flame for 4-5 minutes, add to it tomatoes and fry for 2 minutes. Now add
spinach puree and boil.
6) Add coriander
leaves and garam masala powder and cook for 2 minutes, then slip cheese pieces
in the gravy and remove the pan from heat.
7) After 5 minutes, serve hot with rice or tortilla.
